Method of vinification: Whole bunch pressing. Settling of the must after 24 hours in cold storage. Fermentation in thermo-regulated vats between 18 and 20°.

Tasting: This dry white Gaudou is an exception, made from the grape juice of the red Malbec grape variety. It is harvested very early and vinified as a white wine. It has a beautiful bright, light yellow colour. It has an emotional balance between its nervousness and its fruitiness which lets floral and citrus fruit aromas filter through. The palate is fresh, supple, present, with a lemony finish. It can be enjoyed as an aperitif, with fish, seafood and starters
Food and wine pairing: as an aperitif with dried fruit, vegetable terrine, prawn salad, river fish, grilled white pudding with apples, Beaufort or abundant.
