Grape variety: 100% Malbec
Yield: 20 hl/ha
Vinification: Sulphur-free fermentation, "vegan" fining and gravity-fed bottling.
Ageing: Aged in barrels for 24 months (one 225L and one 600L; traditional format in Gaudou) on the lees.
Environment: Sustainable winegrowing.
Tasting : Deep colour. Young and expressive nose, bouquet of red and black fruits, floral background. Supple in the mouth, tender substance, melted tannins, emphasis on the fruit. A good cahors, already very pleasant. (Guide Gilbert&Gaillard)
Year recommended for tasting: 1 to 15 years old.
Tasting advice: To be decanted 2 hours before serving, at room temperature.
Food and wine pairing: Perfect with all your most refined favourites such as roast beef with mushrooms, roast marcassin or roast venison with cranberries, seven o'clock leg of lamb, grilled magret, vacherin or with a poultry risotto with ceps, a pork filet mignon with mustard, a capon stuffed with foie gras, a Brie de Meaux or a Saint-Félicien. With a Havana as well.
